Summer Nail Trends

Cinco @ Village of Merrick Park

I went shopping to find a dress for a wedding I am going to attend this Saturday (found it at Nordstrom which by the way is having an additional 30% off select merchandise at their stores) and remembered that I had read a couple of weeks back about a new restaurant that was opening at Merrick called Cinco so I decided that today would be a great day to try them out for lunch with my mom and cousin. The decor of the restaurant was very nice, modern mexican. The food was yummy, we had the guacamole as a starter with chips. I will say that Rosa Mexicano's guacamole is very hard to beat but this one was still good. Also had the nachos with adobe chicken, which were huge and really tasty. My mother ordered the quesadillas which she said were delicious and my cousin said the same about her fajitas which came as they should, sizzling to the table. BBQ Pulled Pork Pizza

Recipe:
I sauteed diced onion with bacon. I then added pre-cooked pulled pork, honey garlic bbq sauce and a sprinkle of red pepper flakes. For the pizza crust I bought the refrigerated dough from Pillsbury. When I placed it in the pizza pan I brushed the borders with olive oil and sprinkled garlic, parmesan cheese and oregano. I baked the pizza at 425 degrees for 5 minutes before taking it out and adding the pulled pork mix and shredded cheddar cheese. I then finished baking it for 12 minutes. Simple and delicious!

Fajita Night

My chicken fajita recipe:

Marinate chicken in fresh squeezed lime juice, salt, garlic powder, chili powder and cayenne pepper. Cook chicken in olive oil. In a separate pan, sautee diced onion, green bell pepper, red bell pepper, garlic powder, salt, and baby mushrooms. Add onion mix to chicken. Heat flour tortillas. Instead of sour cream I like to use plain greek yogurt as a healthier alternative without sacrificing the taste. I also prefer to use shredded sharp cheddar cheese. Enjoy!

Last nights dinner....

There seemed to be some technical difficulties yesterday with blogger so I will post last nights dinner today. I hadn't done groceries since getting back from the trip so looking through what I did have in the fridge I came up with this combination: Chicken, Potatoes and Corn. How to put these together? Well here is what I did:
I sauteed onion, red bell pepper, and garlic, I then added chopped potatoes and green beans. I sauteed them all together for a while. I then added the FROZEN chicken, 4 frozen corn kernels,  3 cups of water, complete seasoning, and two pouches of chicken bouillon. After coming to a boil and seeing that the chicken was cooked and the potatoes were tender I drained all the ingredients. I then placed them in a sautee pan, sprinkled parmesan cheese on top and put in the oven on broil until the cheese melted. It ended up being quite delicious and easy! I just came back from an amazing 10 day trip to London and Paris. Although difficult, I will try to make this list of must-do's as short as possible. I will not include the usual must do's (you can find those on Frommers etc..,) but more of the hidden gems I came across.

Brio Tuscan Grille


For dinner today the family wanted italian so we went to our favorite place: Brio Tuscan Grille. We were in the West Palm Beach area driving back down to Miami so it didn't make sense for us to go to the one in Pembroke Pines, after checking on google maps we came to know that there was one in Hallandale Beach at the Village at Gulfsteam Park (there will be another post about this area in the future.) I had called and made reservations for a group of ten but then two more friends wanted to join, I called the restaurant and a nice man answered the phone and said that this would not be a problem. However, upon entering the restaurant we encountered something not usual with Brio - A RUDE HOSTESS. I told her that we were the group of 12 that had reservations for 5:30, she replied "you mean the group of 10" I said " I actually called and said that we would be 12 and they told me this would not be a problem" her response "well I have written down for a party of 10 so I do not have a table, you will have to wait" she then proceeded to talk to her coworker, and the conversation seemed to clearly be about the situation and needless to say it was rather uncomfortable. After waiting ten minutes past our reservation we were seated at our table by her coworker who did not seem very happy either. On a better note, lets talk about what's important, the food! As always the food was just as expected: delicious.

Fresh Baked Bread - Crunchy outside, fluffy inside.

Roasted tomato bread dip (you have to ask them for it, kind of a lil secret)

Their lemonade is home-made. Not too sweet, not too sour = perfect.

Lasagna is a bit hit in our family (this pictures shows half of the actual size, we usually split it and share one.) Comes in a bechamel white and tomato red sauce. Yum, yum, yum.

Lamb Chops (the ones with gorgonzola are my fave.)
