Tres Leches Recipe

I made tres leches the other night for a mexican dinner party and I must say it came out rather tasty. Here is the recipe.

Cake:

1 cup All-purpose Flour

1-½ teaspoon Baking Powder

¼ teaspoons Salt

5 whole Eggs

1 cup Sugar, Divided

1 teaspoon Vanilla

⅓ cups Milk

1 can Evaporated Milk

1 can Sweetened, Condensed Milk

¼ cups Heavy Cream

1 tablespoon rum

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan liberally until coated.

Combine flour, baking powder, and salt in a large bowl. Separate eggs.

Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow. Stir in milk and vanilla. Pour egg yolk mixture over the flour mixture and stir very gently until combined.

Beat egg whites on high speed until soft peaks form. With the mixer on, pour in remaining 1/4 cup sugar and beat until egg whites are stiff but not dry.

Fold egg white mixture into the batter very gently until just combined. Pour into prepared pan and spread to even out the surface.

Bake for 35 to 45 minutes or until a toothpick comes out clean. Turn cake out onto a rimmed platter and allow to cool.

NOTE: I suggest you double the measurements for the milk mixture below as the cake absorbs alot of it.

Combine condensed milk, evaporated milk, heavy cream and rum in a small pitcher. When cake is cool, pierce the surface with a fork several times. Slowly drizzle the milk mixture—try to get as much around the edges of the cake as you can.

Allow the cake to absorb the milk mixture for 30 minutes.

Icing:

1 pint Heavy Cream, For Whipping

3 Tablespoons Sugar

To ice the cake, whip 1 pint heavy cream with 3 tablespoons of sugar until thick and spreadable. Spread over the surface of the cake. Decorate cake with whole or chopped maraschino cherries. Cut into squares and serve.

Taste of the Town

Held on the rooftop of the parking garage overlooking the city, guests will sample culinary delights by many of the area’s popular restaurants, including Segafredo South Miami, Casa Lario’s,  Casa Toscano, Cervezas, Dan Marino’s, Fox’s Lounge, Gardner’s Market, Irish Times, OMG Burgers, Outback Steakhouse, Power Pizza, Shula’s 347, Sole Trattoria, Swensen’s, Whisk Gourmet Food and Catering, and many more.   Restaurants will also compete for “Best of” in five categories:  Best Appetizer, Best Main Course, Best Dessert, Best Presentation, and the final award – The Taste of the Town.    Specialty signature drinks, including the Million Trees Mojito by Casa Lario’s, and larger food portions will also be offered for a moderately-priced fee.   Zoo Miami’s Ron Magill will be the Master of Ceremony for the evening and local bands will provide live entertainment.

 

Guests will also enjoy products from local area shops, including Aurum Collections, Foster & Clark and Game Time, on display all in one location.

 

Proceeds from the event will benefit the Parks Foundation of Miami-Dade and the Million Trees Miami Project.

Just last week I booked the Four Points by Sheraton Studio City hotel close to Universal Studios at $125 total for two nights! I  love Ted Baker, I make it a point whenever I am in Aventura Mall to stop by their store, and yesterday when I did they were having  a sale!
